I have written numerous post about Hon Maguro the real blue fin tuna that swims along the coast of Japan. This particular photograph illustrates what we refer to as fatty tuna which has been cut from the first quarter of fish. The first bloc is section from collarbone and usually wear the belly has fattiest tuna and often lighter color. This fish was a very small tuna and as you can see the color of the meat is much more pinkish.
