Tuna South @ March 10.11

The Southern Blue Fin tuna have moved south to Kyushu. This is the first of many that have migrated to southern Japan as the waters change and the fish move. This fish is chu-toro and it superb, not too fatty but just enough to give the right balance.

One interesting fact, on March 10th 2011, I was having a sushi lunch and there was no tuna. I was surprised and asked the chef, “no tuna today” and he shrugged and said “no”. I asked if it was the first time and the chef replied, “yes”. I thought how strange and was bothered by this, so I had my assistant call and reconfirmed the news. It had happened, no tuna for the first time in 40 years – the next day the tsunami.
